Ingredients

    4 strips bacon cut into pieces
    1 medium onion chopped
    1 cup chopped celery
    1 medium rep bell pepper chopped
    1 cup spinach chopped
    1 cup uncooked whit rice
    1 cup water
    1 oz feta cheese
    2 tbsp parmesan cheese

Directions

In medium size pot add rice and water. Cover pot. Bring to boil. Simmer covered for 20-30 minutes or until rice is cooked.

While rice is cooking. Cook bacon, remove prom pan, pour off most the grease. Caramelize chopped onion in the remaining grease. Add celery when onion is almost done caramelizing. Add bell pepper, spinach and bacon once onion is caramelized. Cook until spinach is wilted. Stir in cooked rice, feta cheese, parmesan cheese and serve.
