Ingredients

    2 # ground beef, browned and drained
    1 onion, diced
    1 can cream of chicken soup
    1 can cream of mushroom soup
    1 can El Paso enchilada sauce
    1 or 2 green chilies
    1 pkg Ole High Fiber/Low Carb tortillas
    1 cup shredded cheddar cheese





Tips

Can be made ahead and refrigerated. Cooking time should be increased slightly 5 - 10 minutes when dish is chilled.


Directions

Brown and drain ground beef. Add diced onion, soups, enchilada sauce and green chilies. Put one layer of tortillas in bottom of casserole dish, add 1 layer of meat mixture, another layer of tortillas, then rest of meat mixture. Add cheese to top. Cook 25 - 30 minutes at 350 degrees.
