Quick Chicken Chili Quick Chicken Chili

    1 16oz Can Tomato Sauce
    1 28oz Can Crushed Tomatos
    1 Cup Reduced Sodium 99% Fat Free Chicken Broth
    2 Large Green Bell Peppers (pureed in food processor)
    2 10oz Cans Red Kidney Beans (drained & Rinsed)
    1 Medium onion chopped
    32 oz Chicken Breast or Tenderloins (cooked shredded)
    2 Tbsp Ground Cumin
    1 Tbsp Chili Powder
    2 Tbsp Smoked Paprika
    .5 Tsp Cayenne Pepper
    1 Tsp Onion Powder
    1 Tsp Garlic Powder


If you like your chili on the spicy side you can add a Tsp of crushed red pepper flakes.
You can sub Chicken with turkey or ground turkey


In a large pot heat 1 Tbsp Extra Virgin Olive Oil on medium high heat...add chopped onion & saute about 3 minutes until soft.
Add cooked chicken to onion and add a dash of salt & pepper...cook stirring frequently about 3 minutes to combine flavors.
Add all other ingredients and simmer on low heat for 1 hour.
Garnish with avocado slices & chopped fresh cilantro.

Serving Size: makes about 12 - 2 cup servings
