Crunchy and chewy, great option for lunch or a quick dinner. Crunchy and chewy, great option for lunch or a quick dinner.

    Tempeh - 2oz
    Soy Mayonnaise - 1 Tbsp (or real mayo if you please, I used Nayonnaise)
    Spicy Brown Mustard - 0.5 tsp
    Cucumber - 0.33 cup small diced
    Garlic Powder to taste
    Salt and Pepper to taste


This is just for one person to have lunch. You can obviously very easily double or triple it.

Heat a pan with non-stick cooking spray. Crumble in tempeh, season with salt, pepper, and garlic powder.

Let cool while dicing cucumbers. Mix everything together and serve (I like it on a piece of bread, which is NOT included in the nutrition).

*You could do this without cooking the tempeh, but it only takes few seconds and tastes much better this way.
