Introduction

Try this light and fluffy version of a sweet potato casserole. Try this light and fluffy version of a sweet potato casserole.
Number of Servings: 6

Ingredients

    3 x small sweet potatoes
    50mls Low Fat Milk
    1 x Egg, separated
    1/4c Sugar-free Maple Syrup
    1tsp cinnamon
    1tsp nutmeg
    1tsp vanilla essence
    20g Walnuts
    50g Whole grain flour
    20g Butter
    2T Brown Sugar

Tips

To lighten further, reduce crumble topping ingredients by half. Use pecans if you can afford them ;-)


Directions

Cook the sweet potatoes. I like baking them but you could boil or microwave. Mash. Add milk, egg yolk, maple syrup, spices and essence. Stir until smooth and creamy and no lumps. Beat egg white until stiff peaks. Fold gently into mashed sweet potato mixture. Using a small food processor or rubbing with your hands, combine walnuts, flour, butter, and sugar. Gently spoon mash into casserole dish and top with walnut crumble mixture. Bake at 350F/175C until cooked through, about 25-30min. Ensure crumble doesn't burn. Cover with tin foil if necessary.
