Ingredients

    1. 1 shredded rutabaga (works out to be about 3 cups)
    2. 2 eggs (lightly beaten)
    3. 2 tbsp buckwheat flour 4. Salt, spices of choice (I felt like some hungarian paprika)
    5. Coconut oil/cooking oil of choice

Tips

You can sub the buckwheat flour for quinoa. Or, you can try with no flour in which case make sure to really strain the rutabaga of liquids


Directions

1. Mix the ingredients
2. Get your skillet sizzling but not smoking with the coconut oil
3. Make little patties with a spoon and toss them into the pan (about 4 fit per round)
4. Crisp up in pan for about 5 minutes... flip and crisp for another 3 minutes

Serving Size: makes a dozen latkes
