    5 cups yam, cubed
    1 medium onion, chunked
    1 cup coconut milk (full fat used here)
    1 Tbsp curry powder (or to taste)


Mix curry powder and coconut milk. Spray a 13x9" glass pan. Mix together vegetables and coconut sauce then add to pan. Cook, uncovered, in 350 oven for 45 or 50 minutes. Check for doneness by cutting a piece of yam with a spoon.
