    1 boneless skinless chicken breast (cooked, diced)
    1 lb penne rigate pasta
    1/4 cup olive oil
    1 clove garlic
    4 oz. feta cheese
    30 Calamata (greek) olives
    2 Tbsp chopped green onions
    1 cup sun roasted tomatoes; julienne cut


Cook pasta per package instructions; drain and put into serving dish. Chop garlic. Cut feta cheese into small chunks. Heat oil in saucepan; toss in garlic and let it brown for a few minutes. Add cubed chicken and toss into pasta.

Add tomatoes, onions and feta cheese; toss gently and serve with baby spinach salad
