Ingredients

    *London Broil, 16 oz
    Olive Oil, 1 tbsp
    Onions, raw, 1 cup, chopped
    Celery, raw, 1 cup, diced
    Carrots, raw, 1 cup, chopped
    Red Ripe Tomatoes, 1 cup, chopped
    Red Wine, 3 glass
    Salt & Pepper to taste
    Garlic, 2 cloves minced

Directions

Salt & Pepper roast, brown in olive oil on both sides until golden. Remove from pan. To pan add onion, celery, carrots and minced garlic and saute 2 minutes. Add roast to pan. Pour in tomatoes and wine. Simmer 3 to 4 hours or until tender.
