Ingredients

    All-purpose flour
    White whole wheat flour
    Baking powder
    Salt
    Pumpkin, cooked
    Milk, 2%
    Eggs
    Brown sugar
    Cinnamon
    Ginger
    Nutmeg
    Ground flaxseed

Tips

If you want even more pumpkin goodness, add some pumpkin seeds before baking. Mmmm!


Directions

Mix both flours, baking powder, and salt. In a different mixing bowl combine pumpkin, milk, eggs, brown sugar, spices, and flax seed. Add dry ingredients to pumpkin mixture. Spray muffin tin with canola oil. Spoon muffin mix into muffin tin. Bake at 375 for 20-25 minutes.
