    3 Slices Butterball turkey bacon
    2 large eggs
    1/2 medium potato with skin, sliced
    1/2 medium yellow sweet onion
    Salt and Pepper to taste
    2 Tablespoons Pace Picante sauce
    2 Tablespoons shredded cheese


Heat olive oil in skillet on medium-high heat. Add onions and cook until translucent. Add potatoes and cook until tender. Push ingredients off to the side of skillet and use open space to scramble the two eggs. Combine both mixtures. Add salsa and cheese. Serve warm.
