Number of Servings: 6


    1 head cauliflower, cut into florets
    1 clove garlic, sliced
    1/4 cup grated Parmesan cheese
    2 tablespoons whipped cream cheese
    1/2 teaspoon sea salt
    1/8 teaspoon freshly ground black pepper
    1 tablespoons chopped chives


If desired, you can transfer to a baking dish, add additional toppings, such AS crispy bacon bits, and/or shredded cheddar & jack cheese. Bake in a 350 oven to finish.


Place a steamer basket into a pan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower and garlic, cover, and steam until fork-tender, approx. 10 minutes.

Return cauliflower & garlic to hot pan after draining to help remove excess moisture. Dump half the cauliflower into a food processor; cover and blend on high. Add remaining cauliflower a little bit at a time, until vegetables are creamy.

Add garlic, Parmesan cheese, cream cheese, salt, and black pepper. Blend a few more seconds, and then transfer to a serving dish and sprinkle chives on top.
