    Brown rice (2 cups cooked)
    Beans, black, 1 cup (rinsed and cooked with rice)
    Carrots, raw, 1 cup, chopped
    Zucchini, 1 cup, sliced
    Sweet potato, 1 cup, cubes
    Egg, fresh, whole, raw, 2 large
    Pepper, black, 1 dash
    *Spices, Cumin Powder, 1 dash


Soak the brown rice and black beans together in a large bowl overnight or at least 4 hours before meal time. Once rice and beans are fully washed strain emptying the water and cook in a rice cooker. Prepare assorted vegetables (the ones in my ingredients list are merely a suggestion). Experiment and mix different veggies and colors together. Spray a large pan lightly with olive oil and put on stovetop. Chop and slice the vegetables into small pieces and put into the large pan on the stove. Cook on low. In a separate smaller pan cook 1 to 2 eggs until they are fully cooked. Add egg, rice, and beans to large pot with vegetables. Cook on medium-high until done. Add your favorite assorted spices. I tried a dash of black pepper and cumin powder.

Optional: Serve with fresh salsa or soy sauce! :)
