    9-10 Phyllo Pastry Sheets
    2 tbsp Avacado Oil
    1/2 lb (225 gm) PC Double Cream Brie (Cut into small pieces about 1/4 " square)
    2 Gala Apples (Core removed and diced) - Place in zip-lock bag and add 1 tbsp Realemon - close and mix)

    Custard Mix
    3 large Free run eggs
    3/4 cup Liquid Egg Whites
    15 tbsp Half & Half
    3 scoops of Organic Stevia Extract Powder
    15 drops of Hazelnut flavoured Liquid Stevia


Bring 9 sheets of PC Phyllo Pastry Sheets to room temperature. With a pastry brush brush the Avacado Oil onto each sheet. Cut squares to fit small muffin cups.

Prepare the muffin tins by greasing with Organic Coconut oil to prevent dough from sticking.

Put two or three squares of phyllo dough into each muffin tin. Then add 2-3 pieces of brie and ~1 tsp of the diced apple. Put about 2 tbsp of custard mix in each.

Place in a convection oven at 300 F for 30 min or until pastry is golden brown.
