    1 10.75 oz. canned chicken
    1 can great northern (white) beans
    1 medium diced yellow onion
    1 1/2 diced green pepper
    1 can chicken broth (reduced sodium is best)
    1 can Rotel diced tomato with chili peppers
    1 tbsp. dried cilantro
    1/2 tbsp. lime juice (optional)
    Dash of black pepper and salt


1. Saute diced green peppers and onion with a splash of chicken broth until slightly tender, about 3-5 minutes.
2. Add the chicken, canned tomatoes, chicken broth, beans, cilantro, salt and pepper.
3. Simmer covered for about 30 minutes.
4. Add a dash of lime juice (optional).
5. Serve with extra salsa, shredded cheese, reduced fat sour cream, or tortilla chips if desired.
