Introduction

Ingredients

    Chocolate Mousse:

    2c heaving whipping cream
    2 TBLS cocoa powder
    4oz cream cheese, room temp
    1/2 tsp unflavored gelatin
    1/2 TBLS hot water
    liquid splenda (or sugar-free sweetener of your choice)

    Topping:
    1c heaving whipping cream
    1/2 tsp vanilla
    1/2 tsp Gelatin
    1/3 TBLS hot water
    liquid splenda (or sugar-free sweetener of your choice)

Tips

Mix up your topping first and save it in another bowl.... then you don't have to clean your mixer in between! :-)

Make sure you lick all spoons and spatulas..... taste-testing is a MUST!


Directions

Put all the gelatin (1 tsp) into a small bowl and add 1 TBLS of boiling water. Stir and let it dissolve and cool.

In a mixer, add the 2c of whipping cream and beat until stiff. Add in the Cocoa and blend. Slowly add the cream cheese while running the mixer on low speed. Add 2/3 of the gelatin mixture and sweeten to your preference. Once fully blended, dump into a bowl and smooth top down till flat.

Clean mixer (if you want)....add in the last cup of whipping cream and whip till stiff. Add in the vanilla, sweetener, and remaining gelatin. Blend well and dump on top of the chocolate mousse, smooth out.

Chill till set....15-30 min...although it's great to eat immediately! Just firmer if you let it set.
