    1 lb 93% lean Ground Beef
    1 can Rotel, diced
    1 cup Minute Rice
    1/2 cup Green Pepper
    1/2 cup onion
    1 can 11.5 oz tomato juice
    1 cup water
    1 tsp. Chili Powder


Brown beef, onion, and pepper in a large skillet. Drain and rinse beef in a colander to remove excess fat. While the beef is draining toast uncooked rice in skillet for about 2 minutes on medium heat, stirring often. Add beef mixture and additional ingredients. Stir well and bring to a boil. Cover and simmer on low 15 to 20 minutes until rice absorbs the liquid.
