Ingredients

    1 cup granulated sugar
    1 cup packed brown sugar
    1 cup butter, unsalted or salted as you prefer
    1 tsp vanilla extract
    3 eggs
    1 cup peanut butter (smooth is easier to work with)
    2 cups quick oats
    2 cups whole wheat flour
    1 tsp baking soda

    1 extra cup of peanut butter, set aside

Tips

The batter will be quite thick, so take time to spread it evenly to the corners of the cookie sheet, so your bars will be all the same size.


Directions

Preheat your oven to 350 degrees.

Cream together the sugar, brown sugar and butter.

Then, one by one, add and mix in the vanilla, eggs, peanut butter (don't forget to set aside the last cup), oats, flour, baking soda and salt.

When everything is mixed thoroughly, spread the mix into a cookie sheet lined with aluminum foil.

Bake in the oven on 350 for 20-25 minutes, until golden brown and mostly solid on top.

Before the bars are very cool, spread the set aside peanut butter on top of your bars. Go slowly, so you don't pull up the top of the bars.

Use the edges of the foil to carefully lift your bars out of the pan and let them finish cooling on the counter or a baking rack, still on the foil.

Cut into 32 bars when they're cool, and enjoy!
