Ingredients

    Cauliflower, cooked, 1/2 head
    1 Clove garlic
    Cheese, Mozarella, Low Moist/Part Skim, 2 oz
    Egg, 1
    *Italian Sausage, pork, .5 lbs
    Broccoli, cooked, 0.5 cup, chopped
    Onions, raw, .5 cup, chopped
    *Rotel diced tomato and green chiles 1/2 can
    *Peppers, sweet, red, fresh, .5 cup, chopped
    *Spinach, cooked, 1 cup
    *Cheese - Kirkland cheddar/jack cheese, .5 cup
    Eggs - 4
    Cauliflower, cooked, 2 cup (1" pieces) (remove)
    Cheese, Mozarella, Low Moist/Part Skim (Lucerne), 2 oz (remove)
    Egg, fresh, whole, raw, 1 large

Directions

Microwave cauliflower for 5 minutes. Place in food processor with one clove of garlic and process until consistency of mashed potatoes. Add 1 egg and 1/4 C of shredded mozarella cheese. Spread mixture in a 9" pie plate. Bake at 450 for 15 minutes. Brown 1/2 lb of italian sausage. Set aside. Saute onions, broccoli, peppers, chopped spinach and tomatoes just until warm. Place sausage and veggies in cauliflower crust. Sprinkle 1/2 cup shredded cheddar/jack cheese. Stir eggs and pour over all ingredients. Shake a little to distribute eggs. Bake for an additional 15 minutes.
