Ingredients

    2 ripe bananas
    1 2/3 cup homemade liquid whey
    2 Tbsp honey and T stevia/sugar blend
    T cinammon, t nutmeg, 1/2 t ginger, pinch salt
    2 t vanilla
    2 T ground flax seed
    2 cups whole wheat flour
    tsp baking soda and tsp baking powder
    1/2 t 1 cup unsweetened coconut flakes
    2 to 3 cups grated carrot


Tips

-other addins: walnuts, almonds, pecans, chopped apples
-you can replece the carrot with pumpkin!
-you can replace the whey with milk
-you can replace the bananas with 1/2 to 1 cup apple sauce


Directions

Grease 20 muffin tins and preheat oven to 400
Mash bananas and add liquid whey. Stir in honey, sugar spices, vanilla and salt.
Stir in flax seed and then flour, baking soda and baking powder. Stir until just moistened.
Fold in carrots and coconut and also any nuts you want!
Bake 15 to 20 minutes
