    1 cup cold milk

    1 (3.4 oz) package instant sugar free/fat free vanilla pudding mix

    2 cups fresh pineapple, diced

    1 reduced fat graham cracker pie crust

    Whiped topping (optional)

    Toasted flaked or shredded coconut (optional)


Wisk together milk and pudding mix until it starts to thicken. Stir in pineapple and pour into premade graham cracker crust shell. Refrigerate for at least 2 hours. If desired, sprinkle about 1/2 cup toasted coconut over the top or garnish with whipped topping when serving.
