Introduction

Number of Servings: 12

Ingredients

    1 cup yellow cornmeal (whole grain preferred)
    1/2 cup whole wheat flour
    2 T baking powder
    .25 tsp baking soda
    .5 tsp salt
    2 T canola oil
    3/4 cup nonfat Greek yogurt
    1/2 cup unsweetened applesauce
    1 large egg
    1/4 cup milk

Directions

In large bowl, mix dry ingredients. In separate bowl, lightly beat egg, add oil, yogurt, applesauce and milk, and whisk together. Add wet ingredients to dry ingredients in large bowl and mix until combined (about 30 strokes of mixing spoon). Scoop into muffin pan that has been coated with cooking spray. Cook at 375 degrees for 18-20 minutes, until edges are browned.

Serving Size: Makes 12 muffins or one 8 x 10 pan of cornbread
