Ingredients

    9 ounces bagged coleslaw (approx. 3/4 of 14 oz bag)
    6 ounces greek yogurt plain
    1 cup chunk pineapple (drained)
    2 tablespoons seasoned rice vinegar
    1/3 cup dried cranberries
    1/4 tsp pepper
    2 Splenda packets
    crunchy chow mein noodles for topping

Tips

Don't mix in the chow mein noodles, just add them to individual servings before eating (to avoid soggy noodles). I like a lot of dressing in my coleslaw, if you prefer less, add the remaining bag of coleslaw and mix well.


Directions

Begin by making dressing for the slaw. In a bowl, stir 1 small container (6 oz) of plain greek yogurt until smooth. Stir in 1 cup of chunk pineapple (no juice), 2 tablespoons of seasoned rice vinegar, 1/4 tsp of pepper, and 1/3 cup of dried cranberries. Refrigerate for 15 - 20 minutes. Mix in 3/4 of a 14 oz. bag of coleslaw cabbage mix. Before serving sprinkle crunchy chow mein noodles on top of individual servings right before eating.
