Ingredients

Juice of 4 limes
4 Bird's-Eye Thai chilli peppers, sliced thinly
4 tbsp fish sauce
1 tsp olive oil
1 clove garlic, chopped very finely
Quarter large onion, diced
1/2 cup okra, sliced thinly
1 cup eggplant, diced
1 cup mushrooms, sliced thinly
6oz lean beef, sliced to 1/2 inch thick pieces
Directions
1. Mix half of the lime juice, peppers and fish sauce. Set aside.
2. Marinate beef slices with lime juice
3. Heat olive oil in a wok
4. Fry garlic and onions until onions are transparent
5. Add okra, eggplant and mushrooms, cook at low heat
6. Cook beef thoroughly in a nonstick pan or a pan sprayed with cooking spray
7. Add to vegetable mixture
8. Pour fish sauce mixture over, stir well, heat for another minute and serve over rice
