    4.5 C diced zucchini
    3 cloves chopped garlic
    .5 a small onion chopped
    3 medium chopped tomatoes
    3 C fresh spinach
    1.5 T canola oil
    2 T soy sauce


Top with Siracha hot sauce. Serve over rice.


Heat a skillet or wok on high. Add oil. sauté garlic and onion until softened. Add diced zucchini. Stir and cook until softened slightly. Add chopped tomatoes. Stir in to add moisture. Add spinach last. Cook until tender. Add a splash of soy sauce. A pan lid can be used to shorten cooking time.
