    2 c dried red kidney beans
    2 c dried black beans
    1-2 lbs ground beef or turkey
    16oz can of diced tomatoes (can also use fresh, just remove skins and dice up, or use paste and add water for less chunks of tomato)
    1-2 tsp cumin
    1-2 tsp black pepper
    1 tsp sea salt
    1-2 tsp paprika
    1-2 tsp chili powder or other spice
    1 medium onion
    2-3 garlic cloves or 1-2 tsp garlic powder
    bell pepper if you have it and like it
    a couple jalapenos if you like them
    a can of corn or cut the kernels off a cob if available

    Chili is great because it is so versatile. My kids don't like spicy so I make it light and my husband adds hot sauce afterward.

Start your beans to soak that morning or do a quick soak by covering the beans with about an 1" of water and bringing to a boil for 15min. Watch them because they expand and you may need to add water. Turn them off and allow them to sit for 1hr then rinse and add to pot with uncooked beef/turkey. Cover with water, add seasonings and tomatoes. Bring to boil and then turn down to a simmer for about an 1hr or so. Check doneness of beans to determine when done. *You can do this in a crock pot also*. If using canned beans- brown beef first and this will only take about 20 mins to bring flavors together. Add veggies about 30mins after starting if using dry beans. Add veggies at the same time if using canned.

Serving Size: Makes a great big pot- (12) 12 oz servings
