Number of Servings: 16


    2 cups Lentils
    2 tsp Garlic, chopped
    2 cups Onions, chopped
    2 cups Celery, diced
    2 28 oz. cans diced tomatoes
    3 Tbs. Bouillon granules, low sodium
    3 cup Brown Basmati Rice, cooked, approx. 8 cups, divided
    1 tsp Thyme, fresh
    2 Bay Leaf
    1 Tbsp Chili powder
    1 tsp Pepper
    1 cup Red Potato, diced
    1 tsp Salt
    2 cups Carrots, chopped
    12 cups Water
    100 grams Pressed Tofu, diced


Simmer garlic and onions in a little water, rather than using oil, in a large pot

Add remaining ingredients, except the rice.

Simmer for an hour or until the potatoes and lentils are tender.

Put rice in the bottom of each bowl [approx.1/2 cup] Top with soup.
