Ingredients

    6 Tbsp extra virgin olive oil
    2 lemons, 1 thinly sliced, 1 juiced
    4 cloves garlic, minced
    1 tsp salt
    1/2 tsp black pepper
    1 15oz can cut green beans
    6 small red potatoes, quartered
    4 boneless, skinless chicken breasts (about 3 oz each)

Directions

1. Preheat oven to 400.
2. Coat a 9x13 baking dish with 1 Tbsp olive oil.
3. Arrange lemon slices in a single layer in the bottom of the dish.
4. In a large bowl, combine remaining oil, lemon juice, garlic, salt & pepper.
5. Add chicken, green beans & potatoes to bowl, toss to coat.
6. Pour mix into baking dish and spread evenly around.
7. Bake for 50 minutes or until potatoes are cooked through.

Serving Size: makes 4 large servings
