    1 lb stew beef
    1 T olive oil
    3 cups yams
    5 carrots, cut into 1/2 inch pieces
    3 garlic cloves, sliced
    1 can fire-roasted tomatoes
    1 1/2 cups beef broth


Brown beef in olive oil or coconut oil, add yams, carrots, garlic, tomato and beef broth, bring to a boil, then simmer for 1 hour until yams are tender. Mash several yams to make the broth thicker.

Serving Size: Makes 8 1-cup servings
