Ingredients

    3 medium potatoes, cooked
    1/4 c. chopped onion
    1/4 c. butter
    1/4 c. +2 tbsp. all purpose flour
    1/2 tsp. salt (optional)
    1/4 tsp. pepper
    1/4 tsp. thyme
    2 cups milk
    1/2 lb. smoked sausage sliced thin
    1 cup frozen peas, rinsed and drained
    3 tbsp. bread crumbs
    1 tbsp. melted butter

Tips

I slice and peel the potatoes before I cook them.


Directions

Pare and slice potatoes to equal 2 cups. Cook onion in butter. Blend in flour and seasonings. Gradually add milk, stirring until smooth. Cook, stirring constantly until slightly thickened. Layer sausage, potatoes, peas, and sauce. Repeat layers, ending with sauce. Combine bread crumbs and butter. Sprinkle over sauce. Bake at 350 degrees for 20 to 30 minutes. Use 2 quart dish. Serves 4
