Ingredients

    parsley, 3 cups chopped very fine
    scallions, 1 cup finely chopped
    tomatoes, 2 large finely chopped
    bulgar, 1 cup dry soaked in 2 cups (or more) warm water
    salt, 1 tsp to taste
    pepper, 1/2 tsp to taste
    lemon juice, 1 -2 large

Directions

I do not add olive oil to my version to cut down on the calories. I scoop up the salad with delicious Arabic pita bread - the thinner the better. Of if you like a crunch, toast stale pita bread and scoop up the salad.
