Introduction

Ingredients

    chop the onion, mince the garlic, slice linguica thinly, peel the potato & shred w/small holes of box grater. Stem & shred the kale.

Tips

Linguica lets out its own oil so no need to add more to sautee the onion. Also shredding the potato lets it melt into the soup, making this a quick version to prep.


Directions

Sautee the linguica in dry pot until slightly browned, then add the onions & cook until softened (about 5 min.) Add garlic & stir in for 20 secs. Pour in broth, bring to a simmer, stirring often. Stir in grated potato while stirring. Cover, reduce heat to low, simmer for 5 mins. Stir in the kale, cover stirring occasionlly & cook until kale is tender (about 25 mins). Stir in salt & pepper. Serve.
