Ingredients

    2 egg whites
    1 whole egg
    1 oz part skim shredded mozzarella cheese
    1-2 large mushrooms
    3 oz baby spinach
    1 tsp olive oil
    Salt & pepper to taste

Directions

1. Whisk together egg whites and whole egg
2. Add a pinch of shredded cheese
3. Dice mushrooms and spinach leaves
4. Heat olive oil in a non-stick skillet
5. Pour in eggs and let set for 30 sec
6. Add in the mushrooms and spinach and the rest of the shredded cheese
7. When omelette is fully set and cheese is melted, carefully fold over one side
8. Plate & enjoy!
