Number of Servings: 8


    1-1/2 cups yellow split peas, dry
    7 cups water
    1 tablespoon Vegetable broth flavoring
    1/2 teaspoon salt
    1/2 teaspoon lemon pepper
    1-1/2 teaspoons dried basil
    1 bay leaf
    2 teaspoons lemon juice
    1 cup cubed raw potato
    1/2 cup diced carrot
    1/2 cup diced celery
    1 tablespoon minced dried onion
    2 garlic cloves, minced
    1 cup frozen peas


Mix all ingredients except peas together in a soup pot and simmer uncovered for about 45 minutes. Just before serving, stir in frozen peas and cook for another couple of minutes or so. You may also add a little olive oil if desired, but you must count it separately -- I did not include it in the nutrition ingredients. Makes 8 servings, 1 cup each.
