    2 Tbs olive oil
    1 pound ground turkey
    1 clove garlic, minced
    1 medium onion, diced
    8 oz tomato sauce
    Manzanilla olives (about 10)
    2 tsp dried oregano
    Salt and pepper
    1/2 c rice
    1 beef bouillon


You can add in sliced green peppers (1-2 peppers)when you add tomato sauce.
You can also add 10 oz package frozen green peas to dish last 10 minutes of cooking.


Rinse rice 3 times in water. Set aside.
Heat olive oil in large pan. Brown ground turkey over high heat until no longer pink.
Add onion and garlic, cook over moderate heat until onion is translucent.
Add olives, oregano, and tomato sauce. Stir in rice. Add enough water to cover contents.
Bring to a boil. Add bouillon cube, stir. Reduce heat to low, cover and simmer 30 minutes or until water is absorbed and rice is tender.

Serving Size: Makes 4 1- cup servings
