Good balance between carbs and protein. Very filling and satisfying. Ingredients

    1 cup oat flour (or put plain oatmeal in a blender until powdery)
    2 scoops vanilla whey protein (I use Body Fortress Whey Protein Vanilla)
    2 tsp cinnamon
    1 tsp baking powder
    1/4 tsp salt
    1/8 tsp allspice
    1/8 tsp nutmeg
    cup Eggbeaters (or 3 eggs-- which changes nutrition facts)
    3/4 cup Splenda or Stevia in the raw
    8 oz pureed carrots (OR babyfood carrots)
    2 oz water
    cup chopped pecans (optional-- **SEE NOTES BELOW)

**IF NUTS ARE OMITTED, this is nutritionally compatible with Medifast for those who follow the MediFast Plan or those looking for a Medifast Meal substitute. (obviously not suitable to replace a Lean & Green Meal, only a Medifast Meal)

Directions

Preheat oven to 350 degrees.

Mix flour, whey protein, cinnamon, allspice, nutmeg, baking soda, and salt together in a bowl.

Mix eggbeaters, sweetener, carrots, & water in a bowl. Add wet ingredients to dry ingredients and mix together.

Spray 8x8 glass pyrex dish with non-stick butter spray &
pour ingredients into dish. Bake for 20-30 minutes until toothpick comes out clean. DO NOT overbake-- it will become too dry. Cool and cut into 8 equal size bars and enjoy!

Put leftovers in an airtight zip-lock or container and store in fridge. Can either let come to room temp or can microwave for a few seconds.
