    3/4 C Molasses
    1/2 C Butter, unsalted
    2 C Bread Flour Wheat flour
    1 Pinch of Salt, 1 dash
    3/4 tsp Baking Soda
    1 tsp ground Ginger
    1 tsp ground Cinnamon
    1/4 tsp ground Cloves
    1 C Cottage Cheese, 2% Milkfat


Can also be baked as muffins. Could also be used as a dessert, or in a smaller portion, as a snack.


Put the molasses and butter in a microwave proof bowl and heat to the boil (be careful - mixture will be VERY hot; do not allow it to burn). Allow it to cool slightly.

Sift the flour with the salt, soda, ginger, cinnamon and ground cloves into a small or medium bowl.

In a medium bowl, place the cottage cheese (you may want to whip it for added smoothness). Add the butter and molasses to the cottage cheese, and then stir in the spices and flour. Pour into a lightly oiled or release-sprayed pan (or use parchment) and bake at 350 degrees for about 40 minutes.
