Ingredients

    3 medium potatoes
    3 slices Kirkland Lo Sodium naturally smoked bacon, (cooked till crisp & drained on paper towel) chopped.
    1 T. Kirkland Meditteranean Blend Oil
    1/4 c. chopped onion
    3 eggs
    1/4 t. Mrs. Dash Garlic & Herb Seasoning
    1/4 c. Shredded cheese

Tips

May service with catsup, etc.


Directions

Microwave potatoes till tender. Cool slighty so can handle to dice. Saute onion in oil till tender. Add chopped potatoes and cook till they begin to brown.
Scramble eggs in a bowl and add seasoning. Pour over potato mixture and cool till done. Add bacon and cheese and cover till cheese melts.
