    1 small yellow onion (about 1 cup)
    10 oz. white mushrooms
    about 2 oz dried European wild mushrooms (black trumpet, morels, chanterelles, hen-of-the-woods)
    4 cups vegetable broth
    black pepper


Only use 2 oz dried wild mushrooms to 10 oz white mushrooms. The wild mushrooms have a strong enough flavor and will overwhelm the white mushrooms.


Sautee the onions in the cooking spray until they are translucent (but not brown!) Add the white mushrooms and cook until they sweat and reduce in volume. Then add the vegetable broth and the dried chanterelles (or mix of dried wild European mushrooms--morels, black trumpets, hen of the woods. Do NOT use shiitakes or miitakes for this!)

Simmer for about half an hour. Then run the soup through a blender or use an immersion blender to create a puree all the mushrooms and onions into the stock.

Serve, sprinkle a few drops of truffle oil on the top. If you want to get very fancy, dry sautee a couple of black trumpet mushrooms or morels and use to garnish.
