Introduction

Ingredients

    12 oz 93% lean ground turkey
    2 tbsp + 1 tbsp olive oil
    1 tbsp crushed garlic
    1 med yellow onion, chopped
    1 cup garlic basil pasta sauce
    Pinch rosemary, oregano, or other spices
    Pam cooking spray
    6 oz whole wheat spaghetti
    8 tbsp shredded parmesan cheese
    2 tbsp margarine
    2 eggs

Tips

It's good to use a deep enough pie pan so that the pasta layer in the center can be about 1/2" thick, but if you don't have a deep pie pan, that's okay too, just push the pasta towards the sides and leave the center somewhat bare of pasta. It will still be yummy!


Directions

This is a fun and easy recipe for kids to make! Chef JJ adapted it by using whole-wheat pasta and low-fat turkey in place of regular pasta and ground beef, and cooking spray instead of shortening for greasing the pie pan.

Boil pasta, with a little salt and a tablespoon of olive oil, to the "al dente" stage, according to package directions (usually 7-10 minutes).

While pasta is boiling:

Sautee the onion and garlic in 2 tbsp of olive oil in a large non-stick sautee pan. Keep sauteeing until onion is translucent and soft. Add ground turkey, breaking it up and stirring it with the onion until it is fully browned. Drain off any oil, then add the pasta sauce, along with any spices you like (we used fresh rosemary and oregano). Simmer and stir until the moisture is reduced. Set aside the pan of cooked sauce.

When pasta is finished:

Drain pasta in a colander and place hot pasta in a large mixing bowl. Add margarine and stir together with pasta until margarine melts.

Preheat oven to 350 degrees.

In a small, separate bowl:

Whisk eggs, then add 4 tbsp shredded parmesan cheese. Stir together well.

Add the egg and parmesan mixture to the large pasta bowl and stir until all of the pasta is well coated.

Spray a 9" pie pan with cooking spray, then place the pasta mixture in the pie pan and spread it towards the edges of the pie pan to form a "crust", leaving a large well in the center.

Place as much of the meat sauce into the center well as will fit, mounding it up to make a "pie filling" shape inside the pasta "crust".

Bake for 20 minutes at 350 degrees. Remove from the oven and layer the remaining 4 tbsp parmesan cheese on top of the meat sauce in the center of the "pie". Bake for 5 more minutes to melt the final layer of parmesan.

Let cool about 10 minutes before slicing into 6 slices.

Serving Size: Makes about 6 good-sized slices of "pie"
