Introduction

Great for everyday or to use up leftover ham.
I use this as a one-dish meal, but if served with other side dishes, reduce portion size accordingly.

Ingredients

    600 g potatoes
    265 g cooked ham, diced
    100 g onion, diced
    3 cloves garlic, chopped
    2 T oil
    1/2 t. salt
    1/2 t. pepper

Tips

Green onions are very nice in this dish, I like to use half regular and half green onions.


Directions

Steam or boil potatoes. Let cool enough to handle. Peel if desired, then dice.
Heat oil in large skillet. Add onions and cook until they begin to soften.
Add ham and garlic and cook until garlic begins to soften.
Add potatoes, salt and pepper, toss all together and cover. Cook just enough to heat up the potatoes.

Serving Size: Makes approximately 4 1.5-cup servings.
