Introduction

Delicious meal served over brown rice or pasta with a green salad on the side. Delicious meal served over brown rice or pasta with a green salad on the side.
Number of Servings: 16

Ingredients

    1 large onion, chopped
    6 cloves garlic minced
    1 tablespoon fresh ginger, peeled and minced

    Saute in one tablespoon of olive oil for 2-3 minutes.
    Add 5 cups diced garnet (red) yams and sauté for another few minutes. Stir in:
    1 quart vegetable broth/stock
    1 teaspoon cayenne powder (or to taste)
    1 tbsp. salt (or to taste)
    1 tbsp. coriander powder

    Bring to a boil and simmer for 15-20 min till potatoes are done. Stir in 1 cup crunchy natural peanut butter.

    Serve hot over steamed brown rice.

Tips

May add any other vegetables as desired; i.e., steamed broccoli, green beans. May also stir in diced red and green bell pepper with onions

Add ingredients as listed. While preparing stew cook desired amount of steamed brown rice.
