Number of Servings: 10


    11 medium potatoes, cut into chunks
    15 baby carrots, sliced
    1 large onion, chopped
    5 cloves garlic, minced
    1 stick Blue Bonnet Light Margarine
    8 cups water
    3 cups 1% Milk
    4 chicken bouillon cubes
    3 tbsp. chopped parsley
    1/2 cup cornstarch
    salt and pepper to taste


In a large stock pot, melt margarine and saute onions, garlic and carrots. Add water and parsley. Bring to a boil. Add chopped potatoes and cook until tender. Lightly mash potatoes and add milk. Bring to a low boil. Combine cornstarch with a small amount of water, just enough to make it runny. Slowly drizzle cornstarch into soup, stirring constantly until it reaches desired thickness. Serve with your favorite toppings:

crumbled bacon (low-fat turkey bacon works well)
low-fat shredded cheese
low-fat sour cream

Makes 10 very generous 1.5 cup servings!
