    4 Skinless Chicken Breast
    1 medium onion chopped
    2 cups of Mozzarela Cheese
    2 cups of Green Chile Enchiilada Sauce
    8 Whole Wheat Tortilla
    1 Tbsp of Reduced Fat Sour Cream


Pre-heat oven to 350. Broil chciken breast until fully cooked. Allow chicken to cool down and shred chicken breast and put in a bowl. Chop up one medium onion and add to the bowl with the chicken breast. Add 1/2 cup of mozzarela cheese to the mixture in the bowl and combine. Spread 1/2 cup of the mixture into each tortilla and roll tightly with seam facing down. Place tortillas into a glass baking dish and cover with Green Chile Enchilada Sauce and remaining Mozzarela Cheese on top. Place in pre-heated oven for 30-40 minutes or until the cheese is crispy and brown. Serve with a dollup of sour cream and enjoy.
