Ingredients

4 Tsp extra virgin olive oil
1 Medium onion chopped
1 clove garlic minced
1 tsp thyme ground
1/2 tsp salt
1/2 tsp pepper, ground black
1 can diced tomatoes with juice (I used the hunts with basil, garlic and oregano
1/2 cup broth, vegetable - low sodium
8 oz callops
8 oz shrimp
1 cup quinoa - not cooked
Directions
Heat oil in large saucepan over medium heat
Add onion and cook for 3 minutes. add garlic, thyme, salt and pepper and cook for 20 seconds. Stir in can of tomatoes and broth. Bring to a simmer. Cover and reduce heat and simmer for 2 minutes. Increase heat to medium, stir in scallops and cook, stirring occasionally for 2 minutes. Stir in shrimp and cook, stirring occasionally for 2 minutes. Stir in quinoa. Cover, and cook until quinoa is done. Fluff, make sure seafood is cooked through and serve.
