    3 pounds boneless skinless chicken breast cut into nuggets
    4 Tablespoons ground flaxmeal
    12 Tablespoons water
    1 cup almond flour/meal
    2 Tablespoons garlic powder
    2 Tablespoons dried parsley
    2 Tablespoons dried oregano
    2 Tablespoons red pepper flakes
    1/2 teaspoon salt


The flaxmeal and water mixture will thicken to approx the consistency of an egg wash to coat the chicken before breading it.


Preheat oven to 350 degrees. Mix the flaxseed meal with the water and put aside to soak. Oil your pan(s) with the oil of your choice. Place the almond flour, spices, and salt in a bowl and mix well. Dip each nugget in the flax mixture and then coat it with the almond mixture. Bake approx 30 min (watch it closely the first time, ovens are different), turning once approximately halfway through. Check for doneness by cutting the largest nugget in half and looking when they have cooked at least 20 minutes (depending on the size of the nuggets).
