    3 pounds boneless skinless chicken breast cut into nuggets
    4 Tablespoons flaxseed meal
    12 Tablespoons water
    1 cup almond flour
    2 Tablespoons garlic powder
    2 Tablespoons ground oregano
    2 Tablespoons parsley flakes
    2 Tablespoons crushed red pepper flakes (optional)
    1/2 teaspoon salt


You can use whatever spices you prefer, but the count is for the recipe as is. I weighed the chicken raw for the calorie count, then weighed the breading, and the total cooked product to get the true calorie count per ounce. Kind of high cal but very low carb and fits the virgin diet plan....a nice change from plain baked chicken.


Preheat oven to 350 degrees. Place flaxmeal in a med bowl with the water and set aside. It will thicken to become an egg substitute to make a wash. In another larger bowl, combine the almond meal with the spices and mix well. Oil a large cookie sheet/baking pan with the oil of your choice. Dip each chunk in the flaxmeal mixture and then coat with the almond mixture. Place on the pan but don't crowd. Cooking time is approximate because ovens are these carefully the first time you make them. They will brown on the bottom so turn them when the bottoms have browned and then cook about the same length of time on the other side.
