    1 cup + 2 tbsp. all-purpose flour
    1/3 cup unsweetened cocoa powder
    1 tsp. baking powder
    1 tsp. baking soda
    1/4 tsp. salt
    1/4 cup + 2 tbsp. granulated sugar
    2 tbsp. + 2 tsp. reduced calorie tub margarine
    1 egg
    1 tsp. vanilla extract
    1 cup lowfat buttermilk
    1 pkg. (4 serving size) sugar-free, fat-free chocolate pudding
    3/4 cup nonfat milk, cold
    1 1/2 cups lite cool whip
    3 tbsp. all fruit strawberry spread
    2 cups sliced fresh strawberries
    1 tsp. powdered sugar


Makes 12 servings.
Preheat oven to 350. Spray 2 8" round cake pans with nonstick spray.
In a small bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
With a mixer, cream together sugar and margarine, add egg and vanilla, beat until smooth. Gradually add in flour mixture alternately with the buttermilk. Divide the batter between the pans and bake for about 15-20 minutes, or until a toothpick inserted in the middle comes out clean.
Meanwhile, mix pudding mix and milk together for 2 minutes and then gently add in thawed cool whip.
When the cakes are completely cool, spread the fruit spread on one cake, top with 1/2 the pudding mixture and 1/2 the strawberries. Cover with remaining cake layer, cool whip mixture and strawberries. Dust with powdered sugar right before serving. Store in refrigerator.
