    500g potatoes, peeled and sliced
    4 leeks, well washed and sliced into 2.5cm pieces
    1 teaspoon finely chopped fresh dill
    1 teaspoon finely chopped fresh mint
    250g shallots, chopped (optional)
    2 dessertspoons finely chopped parsley
    4 teaspoons of vegetable stock powder
    4 cups of water


Boil potatoes and leeks for apporx. 15 minutes in 4 cups of water.
When cool, transfer potatoes, leeks and cooking water plus dill and mint to a blender and puree until smooth. Place back on a low heat, add shallots (optional)and stock powder and cook for a further 10 minutes. Seve sprinkled with the parsley. Serves 4.
