Ingredients

    2 8oz skinless boneless chicken breasts cubed
    2 quarts Low sodium chicken broth Trader Joes
    2 40z cans of fire-roasted diced green chillies - Hatch
    2 12Oz of Salsa Trader Joes
    1/2 of 1LB bag of frozen corn Trader Joes
    1/2 of 1LB bag of frozen pepper strips Trader Joes

Tips

You can either cube the raw chicken or boil the whole chicken in the broth. Once the cooked whole breat is cooked. Remove it from the broth. Cool it and then cut the chicken into cubes and return the cubes to the soup.

Instead of frozen and canned veggies you can cut up fresh veggies.


Directions

Cube the chicken breast and either fry the with out oil just a little water or boil them in the Chicken broth. Once the chicken is cooked, add all the rest of the ingredients and cook for about 30 minutes.
